We couldn’t be more happy for these two! Nicole and Gareth dreamed of a forest wedding weekend where friends and family could spend time celebrating amongst the towering pines. In true Pacific Northwest style, they embraced the beauty of Washington state and treated guests to an unforgettable weekend.

As you step into Copper Creek Inn, located in Ashford, Washington near Mt. Rainier, you are surrounded by the natural beauty of the forest. The rustic cabins offer a picture perfect backdrop for one of the most incredible weekends. As part of the vision, the couple imagined a winding table set in the heart of the forest, lit by candlelight and beautifully accented by wildflowers. Every detail wove together the beauty of nature, including the centerpieces which were sprouted carrots in clear vases and the decor accents were so thoughtfully created. This weekend was nothing short of spectacular!

These two sweet souls said “I do” on the first day with their closest friends and family. Afterward, the couple enjoyed a relaxed BBQ, lawn games, and sipping drinks with their guests under the stars. To compliment their vision, Blue Ribbon Cooking created an elevated BBQ menu with Pulled Pork Sliders, Chilled Shrimp with Marinated Vegetables and Chimichurri Drizzle, Brown Sugar Baked Beans with Rendered Pork Belly, German Potato Salad, Fire-Roasted Corn Salad, and Southern Style Corn Bread with Honey Butter. Each menu time was garnished with edible flowers. The delicious menu was the perfect way to bring friends and family together for a summer evening.

The second day was all about the party! The winding table was laid out so that it gracefully swept through the towering trees. Laden with candles, wildflowers, and a parchment paper tablecloth, it was both a stunning centerpiece but also a fun way for guests to write sweet notes to the couple. We couldn’t imagine a more romantic evening.

The menu focused on bringing people together with tray passed appetizers that offered flavorful bites, including the Herbs de Provance Crusted Tuna on a Wonton Cracker with Olive Tapenade, Heirloom Tomato Jam & Yoke Mousse, Mini Chicken Skewers with Tzatziki Dipping Sauce, Arancini with Saffron Cream and Tomato Jam. They also opted for our Grand Grazing Station, a feast that offers something for everyone.

The family-style meal offered an abundance of flavors. Starting with the Fattoush Salad with Toasted Pita Crisps & Mint-Herb Dressing, the evening focused on summer flavors. The meal continued with Mediterranean Roasted Chicken Thighs in a Garlic Lemon Sauce with Charred Lemons, Grilled Flat Iron Steak with Chimichurri Sauce, and Lemon Pesto Baked Cod (GF). For the sides, the couple chose Roasted New Potato Salad with Watercress, Scallions & Gorgonzola Vinaigrette, Greek Lemon Artichoke Orzo Salad with Feta Cheese, Pike Place Market Grilled Vegetables with Fleur De Sel, and Artisan Breads with Herb Infused Olive Oil & Balsamic Vinegar.

We are thrilled for this incredible couple as they begin their next chapter together!
